200ml newly squeezed lemon juice
500g fine sugar

To make the Drink (makes 850ml, to serve 10)

A few cranberries, to garnish
Mandarin essential oil, to finish

Directions

For the Cordial: Combine the listed components into a pan, heat until it reaches a simmer, stirring until the sugar dissolves. After that, remove from the heat and leave to reach room temperature fully. Decant into a sterilised bottle, close it and store chilled, it will last for around one month.

For the Premix: Pour all the spirits and syrup into one big jug, let it rest for an hour, then filter it best through cheesecloth, so it's perfectly clear.

When ready to serve: Pour 85ml from the batch mix into a cocktail shaker filled with ice, gently stirring carefully for one minute until cold. Filter into a cold coupe glass or equivalent, garnish with the cranberries and finish with a quick spritz with the mandarin essence over the drink.
